Banana Tea Bread

225g (80z) self raising flour
1 1.25ml spoon (1/4 tsp) bicarbonate of soda
pinch salt
75g (3oz) butter
175g (6oz) caster sugar
2 eggs size 3 beaten
450g (1lb) bananas weighed with skin, peeled & mashed
100g (40z) walnuts, chopped.

  1. Heat oven to 180C/350F/Gas Mark 4. Grease and line the base of a 1kg (2lb) loaf tin.
  2. Mix together flour, bicarbonate of soda and salt.
  3. Cream the butter and sugar until pale and fluffy, and the eggs a little at a time alternately with the flour.
  4. Stir in the remaining flour, bananas and walnuts and place in prepared tin. Bake for about 1 1/4 hours.
  5. Cool on a wire rack.

I used to make this often, it uses a lot of bananas but the end product is beautiful and well worth it!
