Coffee Kisses Recipe

175g (60z) Self Raising Flour
75g (3oz) Caster Sugar
75g (3oz) Margarine
1 egg, size 3 beaten
2 x 5ml spoon (2 tsp) instant coffee dissolved in 15ml (1 tbsp) hot water

  1. Heat oven to 180C/350F/Gas Mark 4. Grease two baking trays.
  2. Mix flour and sugar, rub in the margarine.
  3. Stir in the egg and all the coffee essence, mix well.
  4. Divide into calls the size of a walnut. Place on baking trays and bake for about 15 minutes.
  5. When cold, sandwich in pairs with Coffee Butter Icing (see below)
Sandwich just before serving as cream fillings soften the biscuits.




Butter Icing (Butter Cream)

50g (2oz) butter or margarine
100g (4oz) sieved icing sugar
flavouring and colouring as required.

  1. Cream fat, gradually add icing sugar and cream together.
  2. Add flavouring and/or colouring.
Double this quantity to sandwich and coat a 15-18cm (6-7 inch) cake.



Suggested flavourings.

  1. Few drops vanilla essence
  2. Few drops almond essence
  3. Finely grated rind orange/lemon and 1 x 5ml spoon (1tsp) orange/lemon juice.
  4. 2 x 5ml spoon (2tsp) coffee essence
  5. 25g (1oz) melted chocolate
  6. 2 x 5ml spoon (2 tsp) cocoa and 1 x 2.5ml spoon (1/2 tsp) vanilla essence
  7. chopped walnuts
